The highly anticipated unveiling of the 2025 MICHELIN Guide took place on 10th February at the Kelvingrove Art Gallery & Museum in Glasgow, with this year being an extra special occasion as we celebrated 125 years of the MICHELIN Guide. At the Ceremony, the new Michelin Stars, Bib Gourmands, Green Stars and Special Awards were announced at an event attended by some of gastronomy’s biggest talents. What are Michelin Stars?

A Michelin Star is a lucrative award given to restaurants offering an outstanding level of cooking. According to the MICHELIN Guide, they take five universal criteria into account: the quality of the ingredients, the harmony of the flavours used, the mastery of cooking techniques, the unique personality of the chef expressed through their cuisine, and consistency across the entire menu and over time. Restaurants can be awarded one, two, or three Michelin Stars, with three stars being the highest award for chefs who have turned cooking into a true art form.  

When was the first Michelin Star awarded?

The MICHELIN Guide started awarding stars to fine dining establishments in 1926. While the first awards given were for single stars, they introduced a hierarchy of one, two, and three stars five years later, updating the criteria for the different rankings in 1936.

Who awards Michelin Stars? 

A group of anonymous Michelin Inspectors share their experiences eating in different restaurants to decide which establishments should receive Michelin Stars. They are all full-time employees who have formerly worked as restaurant and hospitality professionals. 

What are the Bib Gourmands and Green Stars?

Michelin Inspectors award Bib Gourmands to restaurants they consider the best value for money within MICHELIN’s selection, highlighting where diners can enjoy great food at a reasonable price.

A Green Star is awarded to restaurants with strong sustainability initiatives, highlighting the best eco-friendly gastronomy the hospitality industry offers.
